J’ai réalisé un quatre-quarts au chocolat avec un luxe en plus en l’enrobant de ganache aux pistaches !
Le quatre-quarts peut être plus lourd et plus moelleux que les autres gâteaux, mais il était beaucoup plus mou lorsqu’il était mangé avec de la ganache et de la crème fouettée dessus.

Je pense que les pistaches dans la ganache améliorent la texture ainsi que le goût parfumé~ Quand j’ai coupé le gâteau, les pépites de chocolat à l’intérieur sont sorties en forme de sourire, et j’ai ri avec ~*^^*

C’est un gâteau qui serait vraiment bien à emballer et à offrir en cadeau.

Ingredients

  • 90g de beurre50g de sucre2 jaunes d'œufs80 g de farine à gâteau10g de cacao en poudre5g de levure chimiqueMeringue (2 blancs d'œufs + 20g de sucre)20 g de pépites de chocolat20g de pistache100g de chocolat noir50 g de crème fouettée2g Feuilles de gélatineCrème fouettée (50g de crème fouettée + 5g de sucre)Chantilly au chocolat (50g de crème fouettée + 5g de cacao en poudre+ 5g de sucre)

Instructions

  1. Faire ramollir le beurre, ajouter le sucre et mélanger, puis ajouter les jaunes d'œufs un à un et mélanger.
  2. Tamisez la farine molle, le cacao en poudre et la levure chimique et mélangez, puis ajoutez la meringue en 2 fois et mélangez.
  3. Mettez environ la moitié de la pâte dans le moule et aplatissez-la, puis mettez-y des pépites de chocolat, mettez-y tout le reste de la pâte, aplatissez-la et faites-la cuire dans un four préchauffé à 180 degrés pendant 30 à 35 minutes.
  4. Coupez les pistaches en petits morceaux.
  5. Faites fondre le chocolat noir et la chantilly au micro-ondes pendant environ 40 secondes, puis ajoutez la gélatine imbibée et mélangez. Ajoutez les pistaches hachées et mélangez.
  6. Coupez le dessus du quatre-quarts refroidi et aplatissez-le, puis appliquez (5) partout.
  7. Décorer de chantilly et de chantilly au chocolat.
