Recette de pain au lait Tangzhong

J’ai fait un pain au lait plus moelleux et moelleux en ajoutant du Tangjong.
Le Tangjong est fabriqué en mélangeant de l’eau et de la farine dans un rapport de 5:1 et en le faisant frire dans une poêle pour le fermenter pendant plus de 12 heures.

Je l’ai utilisé après l’avoir sorti à température ambiante pendant 1 à 2 heures avant de le pétrir.
Comme aucun œuf n’est ajouté, la couleur est plus blanche et le goût est plus doux.

Je l’ai pétri avec une machine à pain, mais avec un pétrissage à la main, vous pouvez le pétrir pendant environ 15 minutes jusqu’à ce qu’il soit lisse.
Je pense que ce pain a vraiment bon goût lorsqu’il est cuit et mangé immédiatement lorsqu’il est chaud.

INGRÉDIENTS

  • 125g d'eau
  • 25 g de farine à pain
  • 300 g de farine à pain
  • 40g de sucre
  • 5g de sel
  • 6g Levure sèche
  • 150 g de lait tiède
  • 30g de beurre fondu non salé

INSTRUCTIONS

  1. Mettez de l'eau et de la farine forte dans une casserole, mettez-la sur feu moyen et faites-la bouillir jusqu'à ce qu'elle épaississe, puis mettez-la dans un autre bol, couvrez-la d'un film alimentaire et mettez-la au réfrigérateur pendant au moins 12 heures.
  2. Mettez la farine forte, le sucre, le sel et la levure sèche dans une machine à pain et mélangez, puis ajoutez le tangjong, le lait tiède et le beurre non salé fondu à température ambiante pendant environ 1 heure avant utilisation, et pétrissez pendant environ 15 minutes.
  3. Mettez la pâte en boule ronde, couvrez d'un film alimentaire et laissez fermenter pendant environ 40 minutes jusqu'à ce qu'elle double de volume.
  4. Égouttez le gaz de la pâte fermentée, divisez-la en 3 parties, formez un cercle, couvrez d'un film alimentaire et laissez reposer environ 10 minutes.
  5. Étalez la pâte, façonnez-la, mettez-la dans un moule, recouvrez-la d'un film plastique et laissez-la fermenter environ 30 minutes.
  6. Enduire le dessus de lait et cuire au four préchauffé à 170 degrés pendant environ 30 minutes.
